It’s almost the 4th of July! That means cookouts with lots of yummy salads and fresh fruits and veggies!
What you need:
2 cups of dry quinoa
4 cups water
4 tbsp. EVOO
The juice of three limes
3 tbsp. Red wine vinegar
4 gloves of garlic minced
3 tsp. Cumin
1/2 tsp. Cayenne pepper
2 tsp. Fresh ground sea salt and black pepper
2 red bell peppers chopped
1/2 red onion finely chopped
1/2 fresh cilantro chopped
2 cans of black beans rinsed
How to make it:
Cook the quinoa according to package directions and set aside.
Chop all the veggies and herbs and set aside.
In a large bowl toss the quinoa and black beans together
Add the lime juice and stir together
Add in the pepper, garlic, onion, and cilantro.
Season with salt and pepper
Finally add the EVOO, red wine vinegar, cayenne , and cumin.
