This is perfect for a lazy Saturday. Serve with roasted brussels sprouts to complete the meal.
3-4 boneless skinless chicken breasts trimmed
6 cups chicken broth (i use water and knorr chicken bouillon cubes)
1 tbsp. Minced garlic
Fresh ground salt and pepper
3 bay leaves
Family size vigo yellow rice (family size)
How to make it:
Spray the inside of a crock pot with olive oil. Lay the chicken breasts in the bottom.
Add garlic, salt, pepper, bay leaves, and 5 cups of chicken broth.
Cook on high for 3-4 hours.
Remove chicken and cut up. Return to crock pot.
Add the rice and last cup of broth.
Cook for 2 1/2 hours.
