I made this spicy but you can adjust the amount of jalapeño to your taste.
1 14 oz can diced tomatoes and green chilis (hot)
2 lbs of velveeta cubed
4 boneless skinless chicken breasts cooked and shredded
2/3 cup sour cream
1 oz package taco seasoning
3 minced jalapeño peppers most of the seeds removed
1 can of black beans drained
How to make it:
Coat the bottom and sides of a crockpot with olive oil.
Layer the cubed velveeta followed by all remaining ingredients except the black beans.
Turn crockpot on high for 1 hour then stir.
Add the black beans and cook an additional 30 minutes.
Serve hot with tortilla chips.
