For as long as i can remember we have had village inn peppermint silk pie for christmas eve. It is DELICIOUS! This is a similar taste but very easy to make and feeds 12-16.
Ingredients
For the crust
1 bag of Oreos (traditional family size)
1 stick of unsalted sweet cream butter melted
For the peppermint layer
1 cup of heavy cream
4 tbsp confectioners sugar
1 tsp vanilla extract
2 packages of instant vanilla pudding (3.4 oz each)
3 cups of 2% or higher milk
2-3 tsp peppermint extract
10 drops of green food coloring
For the white chocolate layer
1 cup of heavy cream
4 tbsp confectioners sugar
1 tsp vanilla extract
2 packages of instant white chocolate pudding (3.4 oz each)
3 cups of 2% or higher milk
Whipped topping
2 cups of heavy cream
6 tbsp confectioners sugar
3 tsp vanilla extract
Green and red m&ms chopped
In a food processor combine oreos and melted butter. Pulse until finely chopped. Press into a 9×13 glass dish.
To make the peppermint layer, using a stand mixer beat the heavy cream until soft peaks. Add confectioners sugar, vanilla extract, and peppermint extract. Beat to stiff peaks. Add in pudding and milk. Mix on medium high until it starts to thicken up. Add in the green food coloring then refrigerate 5-10 minutes.
To make the white chocolate layer, using a stand mixer beat the heavy cream until soft peaks. Add confectioners sugar vanilla extract, and peppermint extract. Beat to stiff peaks. Add in pudding and milk. Mix on medium high until it starts to thicken up. Refrigerate 5-10 minutes.
To make the topping, using a stand mixer beat the heavy cream to soft peaks. Add confectioners sugar and vanilla and beat to stiff peaks.
Spread the peppermint layer in the bottom followed by the white chocolate layer. Top with the whipped cream and chopped m&ms. Enjoy!
